Brent and Cora Briggs
Brent and Cora Briggs have been lifelong residents of the Heber Valley. Brent was born in Heber City in the old hospital on 100 South, to Maurice and Rhoda Briggs, in July 1948.He is the youngest of three children. Cora was born in Montrose, Colorado, in May 1953, to Juan and Lillian Montano. She is the oldest of seven children. Cora moved to the Heber Valley in 1964, first to Midway and then to Heber City. Brent and Cora attended different elementary schools, Brent went to Central school and Cora went to the North school. They both graduated from Wasatch High school, Brent in 1966 and Cora in 1971.
Following Graduation Brent went on to attend Dixie State and then to BYU. Cora was working at Valley Lunch or “Scrappy’s” where she and Brent met in March 1972 and married three weeks later.
Throughout the years Brent and Cora worked together at various restaurants in the valley learning all of the positions and details of the restaurant business, but most importantly they found a love and passion for serving the community.
In 1990, they took a leap of faith and purchased the Hub Cafe. They owned and operated the Hub Cafe until 2000. They then went on to become the owner/operators of The Wagon Wheel Cafe from 2002 to 2006. During those years they created a welcoming space that not only served excellent food and hot coffee but also played an active role in enriching the lives of their customers and employees. They fostered excellent relationships with many people in the community and created jobs and mentorship for the teens they hired for their first job.
Brent and Cora supported community events and fundraisers such as the Jr. livestock shows, floats for parades and drivers in the Demolition Derby. They were both members of the Chamber of Commerce for many years and Cora served on the Board of Health.
In 2006, Brent and Cora went in a slightly new direction, taking their passion for serving the community to the Wasatch County Senior Citizens Center, where they have been able to create the same warm, welcoming environment for the senior citizens of the community. They go above and beyond for all of the seniors whether they are able to come in person or have their meals delivered. Their goal has been to make a difference in the daily lives of the Wasatch County seniors by making sure they are able to receive a delicious and nutritious meal prepared with love. Brent and Cora love all of the Senior Citizens of the Heber Valley and will continue to share that love through their warm food and warm hearts.
Brent and Cora recently celebrated their 52nd wedding anniversary this year. Their greatest accomplishment, if you ask them, is and has always been their family. They are proud parents of two sons, John and Ash (Billie) Briggs. They’re also the proudest of proud Grandparents to two beautiful and amazing granddaughters. Addie (19) who is attending the University of Utah and Ella (16) who attends Tooele High School. The girls are the light of their lives. They are very active grandparents and make sure to attend any event that the girls are involved in.
When they get a spare weekend Brent and Cora love to go on road trips, explore old ghost towns, go fishing, or take a beautiful drive around the amazing Heber Valley. On very special occasions you can find Cora planning a surprise party for those she loves. Both Brent and Cora love the Heber Valley and feel privileged to serve such a wonderful community. They are honored to receive the invitation to be the Grand Marshalls of the Wasatch County Fair 2024.
